Give your sweetie a sweet treat! Show your valentine some love with these healthy, chocolate, vegan and gluten-free Valentine Bars, a recipe created by our in-house educator and health advocate Natalie Fedorchenko.
1 cup coconut flour
2 tbsp coconut sugar
½ cup coconut oil (melted)
½ cup raw cacao nibs
1/3 cup slivered almonds
10 dry pitted dates
Mix coconut flour, coconut sugar and coconut oil together in a medium bowl and then press into an 8 by 8 baking dish.
For the topping combine raw cacao nibs, chopped dates and slivered almonds in a high speed food processor.
Pulse for 30 seconds or until the cacao nibs, nuts and dates become a chocolate mass.
Press the chocolate topping on top of the crust. Sprinkle a teaspoon of coconut sugar on top. Bake at 350F for 10-12 minutes. Cool at a room temperature for 30 minutes and then refrigerate for 6 hours or overnight.
This recipe makes 12 bars.
